Mung Sprouts crepe with vegetable upma and yoghurt





Mung Sprouts are more nutritious than Soaked Mung dal. They have less Carbohydrate Percentage when compared to Soaked Mung dal. 

So I have decided to make a dosa out of ground Mung sprouts. Instead of Upma i have decided to make it with vegetables. So i have replaced Semolina with blended/finely chopped cauliflower.

And i have added a Spoon full of greek yoghurt as sides for a tasty feeling. 

Ingredients 

2 Cups of sprouted Mung dal 
1 inch piece of ginger
1 green chilli(you can add more if you want)
1 teaspoon of Cumin 
1 Cauliflower finely chopped(some what like a semolina consistency) 
1 small cup of chopped carrot 
1 small cup of chopped beans 
1 onion chopped 
ginger and green chillies 1 teaspoon finely chopped 
1 pinch of garam masala 
1 Pinch of turmeric
1 table spoon of ( Channa dal, Urad dal, Mustard and Cumin) 
Salt and Oil
1 Full Scoop of Yoghurt 

Method 

For making Upma 

Heat a vessel add a teaspoon of oil. Add Table spoon of ingredients for tampering. 
Now add chopped ginger and green chillies fry for a minute. 
Add onions let them fry for a while and then add carrot and beans. 
At this point add some salt , Garam masala and turmeric. Let them cook for 2 minutes. 
Finally add blended cauliflower and place the lid. Leave it on low heat for 5 Minutes and turn off the heat. 

For making Dosa/Crepe 

Grind Mung sprouts with ginger,green chilli, Cumin and salt. 
Make it a pouring consistency by adding water. 
Now place a spoon full of this mixture on a heated tawa and spread it to make a round crepe. 
Enjoy with Veg Upma and Yoghurt.
This dish is very less in Carbs and hight in nutritional values ..

Strawberry and Oat bran shake





 There is so much debate going on whether to eat oats or bran of oats.

Here is the clear information about what is Oat bran and its nutrition.


A whole grain contains three segments of a seed the endosperm, germ and bran. As the name indicates, oat bran only contains the bran of the seed, which means it is not a complete whole grain.



It is said to be high in Fiber  and Protein. So eating 100gms of oat bran every day will count 30% of your fiber and Protein intake. 





Strawberries or any berries are less in Sugars and rich in vitamins and minerals. Adding a cup of sliced strawberries to your breakfast is going to taste delicious and your fruit intake will be fulfilled. 




Now to make a healthy breakfast using the above ingredients is much easier when compared to our Indian conventional breakfasts (idly,vada,dosa and Upma) as this does not involve any preparation.


Ingredients 


1 Cup of Oat bran(serving cup of 60ML)


4 Cups of water for cooking oat bran


2 Cups of strawberries 


2 Cups of Skim milk 


2 Spoons of protein powder of your choice( I use Pea protein as its good with my digestion) 


2 Cups of water for shake 


Method


Boil 4 cups of water in a vessel. Add Oat bran and make it into a porridge consistency and let it cool. 


Place your Sliced strawberries, Milk, Protein powder, Cooled down porridge and Water in a blender and blend it to a smooth shake. 


Pour it in a tumbler and enjoy your breakfast. 


I normally do it in my bottle blender so that i can take it with me which saves my eating time :)
